Welcome to the CASA Schools Digital Information Kit.

The videos below were created to answer frequently asked questions from parents and students about how our unique culinary apprenticeship programs work. We realize our approach differs from other schools. We strongly believe our approach – the mentor/apprentice approach – works better, especially if your goal is to get a job in a professional kitchen.

Learn 1-on-1 with a culinary professional. The Chef Apprentice School of the Arts (CASA) is the school that provides its students with culinary professionals serving as their private instructors. If you want to be a gourmet chef, we pair you with a working, professional gourmet chef. If you want to be a retaurateur, we pair you with a professional restaurateur. If you want to learn artisan baking or become a pastry chef, we pair you with professionals who are making their living doing what you aspire to do. This hands-on, one-on-one, private instruction approach to learning from professionals who make their living doing what you want to do upon graduation is the CASA Schools standard.

CASA is a member of the BBB with an A rating. We feel that if you invest the 20 minutes it will take you to view these videos, you too will see why our approach not only makes sense, but works well to prepare you for a career in the culinary world.

Daniel Fitzgerald, Culinary Arts Instructor“I believe CASA provides a cutting-edge approach to culinary education. Real world experience is what students need. With the number of students enrolling in traditional culinary schools, the ratio of students to instructors is being stretched to the point of reduced efficiency. One can learn from books, but real experience is gained through hands-on work.”

Daniel Fitzgerald, Culinary Arts Instructor at Los Angeles Unified School District 2000-Present, Former Sous Chef at the Marriott Marquis, New York City

Bill Bracken“Traditional culinary education to me is the apprenticeship (externship) mentorship approach. This is the way our culinary industry started out.

I believe the mentorship approach to culinary education is a sound one. The profit loss statement of every culinary operation looks to productivity and efficiency as its number one priority. Having to re-teach culinary graduates is not only inefficient but also costly and time-consuming.”

Bill Bracken, Owner of “Bracken’s Kitchen” Food and Beverage Consulting, Los Angeles, CA

Chef Troy Artis“When I heard about CASA’s approach to culinary education I was blown away. I just wished that this sort of thing was available before I spent $50,000 or culinary school! They promised me a management position as soon as I graduated. I found out that that was a lie.

On the job experience is the only way to go. The use of the culinary techniques and cooking methods day in and day out, from one scenario to the next is the best way to learn. Doing one recipe a day and paying over $200 a day is bull!”

Chef Troy Artis, Owner/ Operator of Chef Troy Personal Chef and Catering Services, Los Angeles, CA

Michael K McCartyIn speaking of the importance of learning on the job: “It is quintessential, basic and the only real way to learn our profession. All workers are students, but not all students are workers. The lesson must come with the examination.”

Real Parents Speak on our School and Unique Method of Learning:

Tanya Price“There are some things books can’t teach you and that was one of our draws to the Recording Radio Film Connection and CASA Schools. Our daughter was able to learn everything and her mentor would go out of his way to take her places, show her things, and educate her. It was a great environment for her to learn independently.”

Tanya Price

“For a long time now I have been saddened by the debt statistics for new graduates so I was completely on board with the focused training and affordable cost of the program. They work with many successful artists which illustrates the validity of the program. I am a nurse and an educator and feel that you have the absolutely correct philosophy when it comes to the impact of real world learning. I have confidence that when Alexa has completed this program, she will have a marketable skill that will provide her with many opportunities and a bright future. A big thank you to RRFC!”

Dee Cooper

“Sometimes timing kicks in, and it is a blessing. Thank you, Recording Radio Film Connection and CASA Schools, for all your support, it means a lot.”

Make no mistake, getting into debt kills your dreams. To make it as a gourmet chef, pastry chef, artisan baker, or restaurateur, you need to make sure you keep your debt low while you connect yourself into the culinary business. Only fools mortgage their future by spending borrowed money to go to an expensive trade school or college. The smart students attend CASA Schools and apprentice themselves inside a professional kitchen near where they live.

You have choices and decisions to make. Choice One (most other schools) puts you in crowded classrooms and fights over board time on a daily basis. Choice Two (CASA) hooks you up as an apprentice with a mentor (professional chef, restaurateur, or baker) in a real restaurant or place of business where it’s you and your mentor. In other words, quality face time, each and every week.

With us, you are always number one. Advantage: CASA Schools.
